- 2 onions (small)
- 100 grams of carrots
- 1 clove of garlic (minced)
- 1 ginger (chopped)
- 500 grams of beef and pork together
- 2 tablespoons of curry powder
- 1 tablespoon * natural salt
- 3 cubes * curry roux (spicy, finely grated)
- 3 tablespoons of cumin powder
- 1 * Nutmeg
- 1 tsp ground coriander
- 1 * Soup broth
- 1 pc. * Bay leaf
- 1 tablespoon more garam masala
- 1 tablespoon of flour
- 1 salt and pepper
- 2 tablespoons of vegetable oil
- 1 tablespoon of miso
Steps for making dry curry (with lots of kale)
- Finely chop the vegetables (this can be a nuisance, but the texture will be better than chopping them in a food processor).
- Heat the vegetable oil in a thick-bottomed pan and sauté the garlic and ginger until fragrant.
- First, patiently fry the onion for about 20 minutes (over low or medium heat).
- Turn up the heat and fry the minced meat well until golden brown.
- When the meat is browned, sift the flour (so that the umami hardens and the remaining sauce thickens).
- Add the Chinese cabbage and onion. Fry approx.
- Add all ingredients * and cover tightly. Cook over medium heat for about 20 minutes. (if left undisturbed, it can burn).
- After 20 minutes, the Peking cabbage will begin to soften. Continue to boil for 15-20 minutes, mixing everything.
- Taste and season with miso, garam masala, salt and pepper.
- Prepare and serve. I advise you to cook the tomatoes.
- The amount of water depends on the type of Chinese cabbage you are using. If the taste is too simple, add more miso and roux.
