- 30 cannelloni
- 1 kg of spinach
- 1 1/2 kg of cottage cheese
- 2 packages of bascamella

- 3 ounces of white wine
- 1 tablespoon vegetable broth (Knorr)
- 1 tablespoon tincture (Knorr)
- 1 tablespoon of basil
- 1 tablespoon parsley
- 1 pinch of salt
- 1 pinch of pepper
- 150 grams of Parmesan
- Tomato sauce
- 2 cans of chopped tomatoes
- 500 ml of tomato sauce
- 1 tablespoon beef stock (Knorr)
- 2 ounces of red wine
- 500 grams of minced meat
- 1 small onion
- 2 cloves of garlic
- 3 packets of tomato soup
- 1 pinch of salt
- 1 pinch of pepper
- 3 1/2 tablespoons of sugar
Cannelloni recipe with spinach and ricotta (in Maltese)
- Boil water in a pot and add sea salt. Once boiling, add spinach. Infuse for 10-15 minutes and strain.
- Preheat the oven to 150 degrees Celsius
- Place the pan in the oven, add olive oil, garlic and onion and cook for 10 minutes.
- Then add the spinach and ricotta and stir for 5 minutes or until well combined.
- Add the vegetable stock, stock, basil, parsley, salt and pepper and stir well for 5 minutes.
- Add the white wine, half a packet of Bascamel and the Parmesan and mix well until the mixture is thick and slightly thickened.
- Fill all 30 cannelloni and arrange on the plate of your choice. Remember to use a non-stick pan or glazed dish.
- Once the cannelloni are in the pan, add a little milk to cook them through (don't add too much or the cannelloni will soften).
- Place the remaining bascamella over the cannelloni, making sure everything is covered, and garnish with the remaining parmesan.
- We put the pan in the oven and heat it up to 200 C. Keep an eye on the cannelloni, as we don't want them to burn, move on to making the sauce.
- Sauce:
- Place the pan in the oven, add olive oil, garlic and onion and cook for 10 minutes.
- Add the minced meat and stir until the meat is fully cooked.
- Add chopped tomatoes and tomato puree and stir for 5 minutes.
- Add the red wine and stir for 2 minutes.
- Add the beef broth, salt, pepper, and a cup of tomato soup. Mix well for 2 minutes.
- Finally, add sugar and cook for 5 minutes.
- When everything is ready, first pour the tomato sauce, then serve over the cannelloni and serve with bread.
